Selune, a new wine bar in Bed-Stuy, Brooklyn, has quickly gained popularity by offering a unique menu that pairs natural wines with fresh oysters and Japanese sake. Founded by Marc Lioussanne and Bilen Gaga, the bar opened recently and has already received positive reactions from locals. Lioussanne and Gaga's international backgrounds have influenced their selection of beverages, with a special focus on natural wines from small vineyards. The establishment reflects a growing interest among New Yorkers for innovative food and drink pairings, positioning itself within the local culinary landscape.
“Then once we opened, people have just [had] honestly positive, amazing energy, and it's been busy, so that's a good thing,” said Gaga.
“I feel like New Yorkers are usually much more open-minded to what is new, and trying new pairings and discovering new things,” Lioussanne said.
“Because natural winemakers have small vineyards and produce fairly small batches of wine, restauranteurs have to have special connections to get their hands on certain bottles each year,” said Lioussanne.
“I think the interest for people in New York for natural wine is growing,” Lioussanne remarked.
