Captain Cornelius Elmendorf built a tavern and inn in Pine Plains, New York in 1782 that served the bustling Hudson Valley hamlet. The town declined after World War I when rail lines were removed. The building later operated as a French restaurant from 1995 to 2021. Chef Clare de Boer, formerly of King in Soho, relocated to the Hudson Valley during the pandemic and opened Stissing House in March 2022. The restaurant has become a destination drawing diners statewide to the small town. The 6,000-square-foot historic building features multiple rooms, fireplaces, and wide-plank floors, creating an atmosphere described as a lively party that emphasizes community gathering.
