Pauline opens November 12 at 1801 Collins Avenue inside The Shelborne By Proper, occupying a 178-seat dining room with an outdoor terrace overlooking the hotel's iconic pool. The restaurant focuses on Caribbean-Latin coastal cuisine that celebrates Florida's culinary roots while applying Michelin-trained technique and precision. Chef Abram Bissell, a Florida Keys native trained at The Modern and Eleven Madison Park, centers the menu on coastal ingredients, simplicity, and cultural memory. Design by ADC Tuneu uses porthole windows, bespoke stone, and oceanic tones to evoke the sea and create an elegant, restrained atmosphere.
