Mexican Radio opens on May 5 at Hyatt Centric Chicago The Loop, led by chef Dudley Nieto. The restaurant celebrates Cinco de Mayo and Nieto's Puebla roots. It features a lively atmosphere with music and a menu highlighting regional Mexican cuisine. Signature dishes include octopus-and-shrimp ceviche, queso fundido, and a variety of guacamoles. The decor includes artwork from local artists, and the restaurant plans to host guest chefs to showcase diverse Mexican dishes. Mexican Radio is Roanoke Hospitality's only Mexican establishment.
