Trino will open on August 6 in the West Loop of Chicago, introduced by Chef Stephen Sandoval who has previously hosted pop-ups at Soho House. The steakhouse will feature live-fire cooking inspired by Spanish and Latin cuisines, including unique sauces like huitlacoche bordelaise. Sandoval, alongside Oscar Sotelo, is also launching a speakeasy-style bar called Laberinto, creating a multi-level hospitality destination. Trino emphasizes innovative takes on traditional steakhouse dishes, influenced by Argentinian chef Francis Mallmann, and the aesthetics are designed by Aida Napoles.
At Trino, expect live-fire cooking with Spanish and Latin influences. Unique sauces - like huitlacoche bordelaise - will play significant roles, and there will be creative seafood and pasta dishes.
Caviar, for example, will be paired with chicharrón. Sandoval cited Argentinian pyromanic chef Francis Mallmann as an influence.
Sandoval is partnering with friend Oscar Sotelo. Together, they formed Cinco Sueños, which will operate Trino and a speakeasy-style bar called Laberinto.
Leaning into the speakeasy vibe, a rep didn't share much about Laberinto. The interiors of Trino and its sibling bar will be designed in collaboration with Aida Napoles.
